The tale of Khon Kaen Squash. When we had our house built, we had them add about 1 meter of soil on the current land. This was to raise the property a bit higher to keep the water out during rainy season. I didn’t know that the soil would produce fruit and vegetables.
But, you have absolutely no idea where the soil is from. We guess ours came from a farm and, thus, the squash.
The above property has basically been converted into a rice paddy. I doubt that they could grow squash like we can.
Anyhow, we must have gotten our soil from a farm as we found some watermelons growing a few weeks ago and three actually survived and were very sweet.
We also have some veggies growing.
My mother-in-law saw the squash and said she would come over today and prepare a soup for her and her hubby and me to eat.
As soon as she arrived today, she headed for the squash. It didn’t stand a chance. Mom then cleaned it, cut it up, and started to make some soup with pork and a few other veggies for flavor.
The squash and pork were very tender with an excellent flavor. I can’t recall ever having squash unless it was something similar to pumpkin.
Mom also made another spicy dish for dad and we had steamed rice along with sticky rice.
You can see that there was plenty of soup – 2 bowls and a bit more in the pot.
A very simple meal – very fresh and tasty – and made by my mother-in-law. Thanks mom for the delicious pork and squash soup.
